MEXICO offers an authentic, culinary haven which celebrates the vibrant, fresh, lighter side of Mexican cuisine, delivering mouth-watering fare with a loud and lively vibe. Guests were greeted with a variety of pretty drinks, and because I was on my lunch break from work, I chose a virgin margarita. It was truly refreshing and delicious. I definitely recommend it.

We were told that MEXICO truly cares and takes part in every nitty-gritty detail of the business including the furnishings inside the restaurants!
We were then treated to a selection of new dishes from the Spring menu. I am a huge fan of spicy food so it goes without saying that, I truly enjoyed trying out Culley’s hot sauces with each dish. You can purchase these four sauce bottles for $50 a set, they would make a lovely gift indeed. The sauces are chipotle, tomatillo, mango and habanero.
MEXICO now boasts seven specialty Mexican restaurants with further expansion on the horizon. The focus is on clean, vibrant and fragrant dishes which still underpin the bold, authentic flavours accustomed to Mexico.
The new Spring menu will be a refreshing start to the warmer months ahead. The focus continues to be on textures and the layering of complex flavours. Each new seasonal menu is an opportunity to explore rarely used ingredients to create unique dishes. The layering of flavours and textures is a common theme as MEXICO weaves through a menu designed to embrace warmer months with fresh, bright, punchy dishes, and bold combinations to best deliver the ‘MEXICO’ experience.
There are a plethora of fresh, healthy options and the menu is kept interesting with weekly specials and four menu changes per year to match the seasons.
Highlights of the new spring menu include a Beef Skirt Soft Shell Taco, Ceviche with Pork Crackling; Cinnamon Braised Lamb Quesadilla; the mouthwatering favourite MEXICO Free Range Fried Chicken; and for dessert, there is Rhubarb Mousse, Mexican Carrot Cake or their better than the best Churros.
I truly enjoyed the new spring menu and would definitely recommend it to friends, family and my readers. My favourite dishes would have to be the ceviche with pork crackling and mussel coctel.
